ADUKI BEAN SOUp
4oz Aduki beans soaked overnight
4oz Split red lentils
1 pint of water
3 sticks of celery chopped
1 large onion chopped
1 garlic clove crushed
1 green pepper finely chopped
1 red pepper finely chopped
6oz mushrooms chopped
1 pint of vegetable stock
a handful of fresh basil leaves
In a large saucepan bring water to boil, add pre soaked beans and boil rapidly for 10 minutes.
Add lentils and simmer for 1 hour 30 minutes
Add all other ingredients except for basil, season with black pepper and cook for a further 30 minutes.
Remove from heat and tear basil leaves and sprinkle for serving.
Serve with wholemeal or rye bread for lunch or dinner.
